Recipe Notes and Serving Suggestions
1. Serve as a dip for tortilla chips, vegetables, or pita bread.
2. Use as a spread for sandwiches or on toast.
3. Make a cool salad. Instead of mashing the avocado and potato, cool the potato, cube the avocado and potato, and mix with diced tomato, lemon juice and salt for a colorful preschooler salad.
