Cranberry Crisp
Cranberry crisp is a great food activity to warm up your preschooler in the late fall and winter when cranberries are in season. This recipe involves cooking the cranberries with sugar and then creating preschooler-sized single servings of cranberry crisp when the mood strikes. Your preschooler can get involved by measuring and combining the topping ingredients and dishing out the single serving components before warming.
1/2 cup white sugar
2 Tbsp whole wheat flour or all-purpose flour
2 Tbsp oats
2 Tbsp brown sugar
1 Tbsp cold butter
Step 1: Prepare the cranberry mixture.
Empty a 12oz bag of fresh cranberries into a medium saucepan.
Add about 1/2 cup of sugar, and cook, stirring frequently.
Continue cooking for about 10 minutes. Ask your preschooler to listen for the popping of the cranberries as they heat up. Cook, stirring, until most of the cranberries have popped. Cool.
Step 2: Prepare the topping.
The ratio of topping ingredients doesn't need to be exact so your preschooler can do the measuring.
In a small bowl, add 2 Tbsp whole wheat flour, 2 Tbsp oats, 2 Tbsp brown sugar and 1 Tbsp cold butter.
Mash the dry ingredients and butter together until crumbles form.
Step 3: Create the single serve treat.
Dish about two heaping teaspoonfuls of the cranberry mixture into a small, microwave-safe bowl.
Sprinkle about one tablespoon of topping on top of the cranberries.
Pop in the microwave for 15-30 seconds or until topping is melted into the cranberries.
Stir and make sure there are no hot spots before serving your preschooler.
2. Instead of the flour, oat, sugar mixture, use crumbled graham crackers.
3. Add chopped walnuts, pecans or almonds to the topping mixture.
